• Honey Basted Baked Chicken

  • This is a common supper in our house, served along side some sweet potato oven fries and a salad.  Often times, I'll cut the chicken into strips or nugget-sized pieces or I'll use chicken tenders instead of full boneless skinless breasts.  I hope you enjoy this sweet, tangy, crispy chicken recipe :)

    1/2 c. honey
    1/4 c. Dijon mustard
    1 clove garlic, minced
    1 small onion, finely diced
    4 chicken breasts--boneless & skinless
    2 c. crushed corn flakes
    Salt and pepper to taste

    Preheat oven to 350 degrees. In a small bowl, combine honey, mustard, garlic, and onion. Dip chicken in misture and roll in corn flakes. Coat a baking sheet with non-stick cooking spray. Place chicken on baking sheet. Sprinkle with salt and pepper. Bake at 350 degrees for 35-40 minutes. Makes 4 servings.
